RECIPE - RHUBARB GINGER SIMPLE SYRUP

Rhubarb Ginger simple syrup from the kitchen of Lydia Ross
Makes about 3- 8oz jars

8 cups chopped rhubarb
½ cup chopped fresh ginger or you can use dried non crystalized ginger (ginger is optional)
1 cup water
1 cup sugar


Put in a large pot and bring to the boil. Turn heat to simmer and cook for 20-30 min. The rhubarb should be very soft(like falling apart) and the liquid beginning to thicken slightly.

Remove from heat. Let steep for 40 minutes.

Then strain through a fine sieve into a large bowl. You can let it sit for an hour and drip naturally, then using the back of your spoon squeeze out a little more syrup.

Toss out rhubarb and ginger.


You can use jars, bottles or whatever to bottle up your syrup. Keep in the fridge up to 2 wks.

Use this syrup to make great summertime drinks. Use any unsweetened beverage to mix it with, make a rhubarb ginger vodka martini, use it with club soda.. use as much or as little as you like, let your imagination run wild!

Here it is with club soda and a sprig of lemon balm.
